Maltodextrins are characterised by their “DE” (dextrose equivalent). Basically DE is a measure of the sweetness; the higher the DE the greater the sweetness. Maltodextrins are low DE products, which means they are bland to taste and contribute no sweetness to a product when added.
Viscosity:The lower the DE, the higher the viscosity of the product. The lower DE Maltodextrins can achieve quite high viscosity at levels of about 40%. They can contribute significantly to the viscosity of some solutions requiring body.
Energy: Maltodextrins can be used in sports beverages at high levels to provide a high energy drink. Relative to sugars, Maltodextrins provide higher caloric density without unbalancing the bodies fluids.
Brewing: Maltodextrin is a non fermentable sugar so is used in brewing to add flavour, body, mouthfeel and head retention to a brew. An 18-20DE rating will leave a nice sweetness and add body to the finished brew. It can be used when your brew is too dry for your preference.
Start with 100-150 grams per 23 litres and increase across future brews as necessary. You can use this with dextrose in cider, beer and ginger beer brewing. It can also be used in wine making and for sweetening liqueurs.
